vegetarian rights in the work place

she only has one choice of vegetarian meal in the canteen, and if she'slucky gets to eat 'baked potato' as the only alternative to meat...
this is because last week she discovered that the 'vegetable soup' she had been eating at lunchtimes, was in fact cooked using a beef based stock.
The chefs knew she was a vegetarian, but when confronted about this, basically laughed it off
imagine how sick you would feel if you discovered you had been eating meat for years, without your knowledge
last week she only ate salad and ketchup sandwiches
is this a good diet for someone?
i request any information on the rights of vegetarians in the work place.
any help would be much appreciated

The Regulations define religion or belief as ‘any religion, religious belief, or similar philosophical belief’.
As religion and belief are very loosely defined, it should not be assumed that it only covers the main organised religions.
The DTI define philosophical belief as a ‘profound belief affecting a person’s way of life or perception of the world’. Examples include: atheism and humanism.
It is not clear if the following are regarded as philosophical beliefs for the purposes of the regulations:
Animal rights activists;
Environmental campaigners;
Vegans or vegetarians
Being a supporter of a political party (such as the Green Party) because of
strongly held political views is also not covered.
